Ingredients: 
* 4 pounds chuck roast 
* olive oil 
* 1 packet dry onion soup mix 
* 1 cup beef broth  
* 1/2 bag of carrots  
* 1 bag of russet potatoes, chopped  
* 1 onion, chopped 
* 2 stalk celery, chopped 
* S&P to taste  
Season chuck roast with salt and pepper. Heat oil in a large skillet over high heat. Sear to brown, about 3 minutes on each side.  
 
In your crockpot add seared chuck roast and add soup seasoning on top. Add beef broth, onion, carrots, and potatoes.  
 
Cook on low for 8 hours.
