Chicken Noodle Soup
Ingredients:
3-4 boneless skinless chicken breasts
1/2 to whole onion, chopped
1 bag shredded carrots
2 stalks celery, sliced
4 tsp. sprigs fresh thyme
4 tsp. sprigs fresh rosemary
3 cloves garlic, minced
1 bay leaf
Kosher salt to taste
Ground black pepper to taste
10 cups slow-sodium chicken broth
1 bag egg noodles
Directions:
Step 1~ In slow cooker, combine chicken, onion, carrots, celery, thyme, rosemary, garlic, and bay leaf. Season with salt and pepper to taste. Add chicken broth.
Step 2~ Cook on Low for 6 to 8 hours or High for 4 hours. Remove chicken from cooker and shred. Discard bay leaf. Return chicken to slow cooker.
Step 3~ You can freeze soup mixture before adding noodles in storage container or eat now by adding noodles then cook on low, covered, until cooked, 20 to 30 minutes.
