Here’s a simple Caprese pasta recipe:
Ingredients:
– 1 pound of pasta
– 2 cups of cherry tomatoes, sliced in half
– 8 ounces of fresh mozzarella, sliced into cubes
– 1/2 cup of fresh basil leaves, chopped
– 2 cloves of garlic, minced
– Salt and pepper, to taste
– 1/4 cup of olive oil
Directions:
1. Cook pasta according to package instructions and reserve 1 cup of pasta water.
2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes, until fragrant.
3. Add cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
4. Add fresh mozzarella and 1/2 cup of pasta water to the skillet. Cook for an additional 2-3 minutes until the cheese starts to melt and combine with the sauce.
5. Add cooked pasta to the skillet and toss well to combine with the sauce.
6. Add chopped basil, salt, and pepper to taste. Serve warm and enjoy!
