3-4 boneless, skinless chicken breast
1 yellow onion, chopped
2 cans of black beans, drained & rinsed, 15oz
1 can of chili beans, drained & rinsed, 15oz
2 cans of rotel, 10oz each
Optional: 1/2 jar of verde salsa
1 packet of taco seasoning
1/2 c of chicken broth, low sodium
2-3 tbsp of tomato paste, 6oz can
Toppings:
Shredded Mexican blend cheese, chopped green or red onions, diced avocados and corn tortilla strips/chips
Directions:
Spray your crockpot with cooking spray. Add your chopped onion, rotel, beans, green chilis / or verde salsa, chicken broth, tomato paste, taco seasoning, and lately chicken.
Place on high for 4 hours or low for 6-8 hours. Stir occasionally & shred chicken 30 mins before serving.
