Ingredients

Crockpot chicken quesadillas

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bell pepper, diced
  • 1 onion, diced
  • 8 small flour tortillas

Instructions:

  1. Place chicken breasts in the crockpot.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour salsa over the chicken.
  4. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked and easily shredded.
  5. Shred the chicken using two forks.
  6. In a skillet, sauté diced bell pepper and onion until tender.
  7. In another skillet, place a tortilla, add a layer of shredded chicken, sautéed vegetables, and a mixture of cheddar and Monterey Jack cheese.
  8. Top with another tortilla and cook until the cheese is melted and the tortilla is golden brown.
  9. Repeat for the remaining tortillas.
  10. Slice and serve your delicious crockpot chicken quesadillas with your favorite toppings like sour cream, guacamole, or salsa.
